pork shoulder (half or full, depending on how much you want to make — increase rest of ingredients slightly for full shoulder, but don’t double amounts.)
1 large onion
1 ts chili powder
1 ts cumin
1 ts paprika
1 tbs red pepper flakes
1 ts ground ginger
1 tbs thyme
2 bay leaves
2 cloves garlic
1/4 cup brown sugar
3 tbs worcestershire sauce
1/3 cup chicken stock
coarse salt
pepper
olive oil
cider vinegar
chipotle Tabasco sauce

Salt and pepper pork and sear in skillet with oil. Place the meat in the slow cooker pot. Chop onions coarsely and sautee over medium heat with cumin, paprika, chili powder, and red pepper flakes. After a few minutes, add diced garlic, cayenne, ginger, and thyme. After another minute, add brown sugar, worcestershire, and stock. Mix til it is saucey, and pour the mixture into the pot over the meat. Add bay leaf, and cook on low for 7-8 hours, until the meat is falling off the bone. When the meat is ready, pull the meat and shred it in a bowl. Discard bones, excess fat, and onions, and reserve about half the fluid. Mix that fluid with 1/4 cup of cider vinegar and 1/4 cup of chipotle Tabasco sauce. Add the meat back in with the sauce, and simmer on low for another 10-20 minutes.
